Natural Monascus Extract Monascus Red for Food Coloring

Monascus red is a natural colorant produced by the fermentation of the mold species Monascus purpureus, commonly known as red yeast. This pigment is traditionally used in Asian cuisine, particularly in the production of red yeast rice, which is rice fermented with Monascus species. The red pigment is primarily composed of various Monascus pigments, including monascorubrin, rubropunctatin, monascin, and ankaflavin.
